Winemaking Notes
20% Whole bunches are included with the balance de-stemmed for fermentation over the bunches. The alcoholic fermentation was carried in open fermenters. Following fermentation the fruit is lightly pressed directly to old French puncheons. The wine was matured for 7 months in French oak, racked from barrel and gently filtered to bottle.
