Variety: Petit Verdot

Alcohol: 13.5%

A very small batch experimental wine. Only one barrel produced (360 Bottles). 97% Petit Verdot and 3% Viognier. Carbonic Macerated in old oak barrels for three days with 43% whole bunch be-fore being foot stomped and left to soak for a further 16 days. Pressed off and left in old oak for 12 months. Removed from oak, given a slight acid adjustment, left unfiltered, bottled, and left to de-velop for a further 12 months before release as an aged red. Every Bottle is closed with a DIAM cork and wax sealed by hand.
