Produced by ‘Methoide Traditional’, hand-picked and whole bunch pressed and then cold settled to clarify the juice. Temperature controlled fermentation over three weeks and left to develop on lees for 16 weeks. ‘Tirage’ bottled in August of 2014 for bottle fermentation and left ageing on lees for a further 48 months to enhance aroma, flavour and mouth-feel. Riddled and disgorged with minimal liquor addition to retain natural fruit flavours and bottle development.

Appearance: Pale lemon straw with fine and persistent bead of bubble.

Nose: ‘Bread dough’ yeast character, with honeydew and melon fruit aromas.

Palate: Fruit dominant and full flavoured, the palate is clean and long with good fruit sweetness and balance with a clean and crisp finish. This wine has a rich, developed yeast creamy texture with fruit-driven flavours and pleasant, lasting finish. The wine is full, soft and delicate in a great example of the style.

Food: Serve with seafood, stone fruits and most white meat dishes.
