Canberra District Sparkling Wine Gallagher Sparkling Shiraz 2021

Gallagher Sparkling Shiraz 2021

Produced by ‘Methoide Traditional’. The Shiraz grapes were picked at optimal maturity with the fruit showing rich Plum and Dark fruit flavours. The initial fermentation was on skins for 10 days before pressing. After finishing malo-lactic fermentation, the wine was then further aged in 2 and 3 year old French oak barrels to allow slow maturation without too much oak flavour. This wine was ‘Tirage’ bottled in August of 2018 for bottle fermentation and left ageing on lees for a further 12 months to enhance aroma, flavour and mouth-feel. Riddled and disgorged with balanced liquor addition to retain natural fruit flavours.

Food: – Serve with rich meat dishes, Christmas cake or (our favourite) dark chocolate desserts.

Appearance: – Deep, rich red colour with fine and persistent bead of bubble.

Nose: – Rich and dark Plum aromas with a hunt of Licorice and Pepper.

Palate: – Fruit dominant and full flavoured, the palate is clean and long with good fruit richness and balance with a clean and long finish. This wine has a rich, developed texture with fruit driven flavours and pleasant, lasting finish . This wine is full, soft and delicate in a great example of the style.
